Growing Conditions
Near average winter rain and warm early spring heat meant budburst was early. Cooler mid and late spring temperature slowed the growth and gave us some nervous nights on frost alert. The heat returned in November with quick flowering and good set. The warm days and cool nights of summer gave us Cabernet with intense cassis and red berry flavour and Shiraz showed ripe plum and dark fruits. Both varietals gave us great colour intensity and structure.
Nose
Soft blackcurrant and plum fruit notes have an abundant texture with rounded fine-grained tannins
Palate
With bottle age, the wines maturity shows cedar and chocolate complexity
Appearance
Deep ruby red in colour
Food Pairing
Cabernet Shiraz pairs well with grilled meats and vegetables, duck, braised dishes and hard cheeses. Wagyu beef teppanyaki and vegetables
Aging
Aged in hogshead oak barrels for 36 months
